So I’m going to share with you my fool proof recipe for my delicious lemon drizzle cake!
To make this yummy lemon drizzle cake you will need a 1 lb loaf tin, a 1 lb loaf cake liner or some grease proof paper, a mixing bowl, an electric whisk and a lemon juicer would be handy too although you can juice the lemon by hand.
Firstly grease and/or line your loaf tin and set the oven to 175c or 160c if you have a fan oven. Then gather your ingredients for the cake batter, measure them out and add them to your mixing bowl.
60z self-raising flour
60z caster sugar
5 tbsp milk
grated rind of one lemon
1/2 tsp baking powder
4oz caster sugar
juice of one lemon
Mix all of the batter ingredients together in your bowl at the same time with an electric whisk (or hand whisk if you don’t have one) for a couple of minutes, pour into your lined loaf tin and bake in the oven at 175c (160c in a fan oven) for 45mins or until golden brown.
Whilst the cake is baking juice the lemon and mix together with the 4oz of caster sugar ready to pour onto the cake.
Once the cake has baked poke holes all over the cake with a BBQ skewer to help the mixture soak through the cake, and pour the sugar lemon icing onto the cake.
Set the cake aside to cool, and once completely cool remove from baking tin.
