My Key Lime Pie recipe always goes down well when we have people over!
I made this desert for a party and I didn’t manage to take a photo of it before it was devoured by all of our guests!
It is such a quick, easy and delicious recipe to follow!
The ingredients you need for the base of the Key Lime Pie are:
* 200g digestive biscuits
* 200g ginger snap biscuits
* 200g butter (melted)
And for the cream:
* 600ml double cream
* 397g (one tin) of condensed milk
* 6 limes (juiced)
grated lime zest from the limes (optional)
Firstly, you have to break up the biscuits into fine crumbs for the base either by hand or with a food processor (I use a rolling pin and foil and crush them that way).
Then melt the butter and mix into the biscuit crumbs and pour into the base of the dish you are using. Chill the biscuit base in the fridge for at least 15 minutes.
Then juice the limes, and add the condensed milk, double cream and lime juice into a bowl and blend together until it thickens using an electric hand whisk/mixer.
(At this point you can add in the zest of the limes if you want to make the flavour stronger)
Pour the cream onto the biscuit base and chill in the fridge for at least 2 hours before serving.
